Halloumi Salad Recipe

Halloumi salad is a delectable dish that combines the rich flavours of grilled halloumi cheese with a medley of fresh, vibrant vegetables. This Mediterranean-inspired salad bursts with color and taste, making it a delightful and healthy option for any meal. The star of the show, halloumi cheese, is perfectly seared to achieve a crispy outer layer while maintaining its creamy interior. Its savoury, slightly salty profile complements the crispness of cucumbers, juicy tomatoes, and parsley.

INGREDIENTS

Halloumi:

- 225g Halloumi Cheese

- 1 tsp Red Pepper Flakes

- 3 Tbsp Honey

Salad:

- 2 Whole cucumbers

- 1 Small bunch parsley

- 250g Baby Plum Tomatoes

- 1 Pomegranate (seeds)

- 2 Spring Onions

Dressing:

- 1/4 Cup Extra Virgin Olive Oil

- Juice of 1 Lemon

- 2 Tbsp Pomegranate Molasses

- 2 Tbsp Tahini

- 1 Tsp Sesame Seeds

- 1 Tsp Sumac

- 1 Tsp Salt

- 1/2 Tsp Black Pepper

METHOD

Prepare the Halloumi:

- Slice halloumi into cubes and dress with red pepper flakes and honey

- Heat a non stick skillet or grill pan over medium heat

- Place the halloumi slices in the skillet and cook for about 2-3 minutes on each side or until they are golden brown and have grill marks. 

- Once cooked, remove the halloumi from the skillet and set it aside.

Assemble the Salad:

- In a large salad bowl, add in the cucumbers, parsley, baby plum tomatoes, pomegranate seeds and spring onions. You can also add sliced avocado if desired. 

- Once the halloumi is cooled down, add into salad. If you like your halloumi warm, do not add into salad yet. Instead serve on top of the salad whilst still warm and enjoy.

Make the Dressing:

- In a small jar, add in the extra virgin olive oil, lemon juice, pomegranate molasses, tahini, sesame seeds, sumac, salt and black pepper. Close the lid and shake well so all ingredients are combined together. 

Dress the Salad:

- Drizzle the dressing over the salad, using as much as your prefer. Toss the salad gently to coat the ingredients with the dressing. 

Serve:

- Divide the halloumi salad among the serving plates

- You can serve the salad as a complete meal or as a side dish. It’s delicious on it’s own or with a side of crusty bread.
